The unique thing about sandwiches is how diverse the filling can be. Veggies, chips, french fries, fruits, the sky’s the limit. Growing up, I was accustomed to throwing any leftover ingredients that paired even remotely well together between two slices of bread and calling it a day. Over the years, however, I’ve found myself sticking to a key few ingredients, which typically grace my fridge as leftovers but become stars in the stage of my sandwiches. Below is the recipe for this sandwich, which of course is open to modification, but I recommend that you stick with the original recipe for your first time!

Everything but the kitchen sink sandwich
Yield: 1 serving
Duration: 15 minutes
Ingredients:
- ¼ red onion
- Dill pickle (as much as you’d like)
- Protein: firm tofu, falafel or a sunny side up egg (or all three, if you’d like!)
- 2-3 slices of tomato
- Sprinkle of feta cheese
- 1 tablespoon ketchupÂ
- 1 teaspoon sriracha
- 1-2 slices of avocado
- 5-6 potato chips, crushed
- 1 tablespoon butter
- A dash of salt and pepper
- 2 slices of bread (sourdough is preferred, but you can use whatever you like)
Instructions:
- Toast the bread as long as you’d like (for this recipe, medium-high toasted is a good, more crispy, darkened bread)
- Meanwhile prepare vegetables/fruits as described (onion, tomato, avocado)
- Make your choice of protein (egg, tofu straight out of container or falafel)
- Take toasted bread and spread butter on one side, then mix ketchup and sriracha on opposing side
- If protein of choice is falafel or tofu: on side with butter, add protein of choice followed by tomatoes, avocado, onion and pickle
- Else: on side with butter, add avocado, tomatoes, sunny side up egg, onion and pickle
- Top with crushed potato chips, feta cheese, salt and pepper
- Enjoy!
This sandwich certainly packs a powerful, flavorful punch and is sure to fill your belly for hours on end. Personally, I eat this sandwich on days when I’m not feeling the culinary motivation to whip up another pasta dish but need to power through hours on end in the library working on four different classes. I recommend adding some heat with a little sprinkle of paprika, red or black pepper depending on your mood. Whatever you choose to modify in this dish, I hope it gives you everything you need in your time of need.
