Ingredients (Grits):
- 1 cup instant grits
- 4 1/2 cups water
- 1 teaspoon salt
- 3/4 cup grated cheddar cheese
- 1/4 cup parmesan cheese
- 2 tablespoons butter
- 1/2 teaspoon ground black pepper
Ingredients (Shrimp):
- 1 pound raw shrimp
- 2 tablespoons flour
- 1 teaspoon garlic
- 1 teaspoon ground black pepper
- 2 teaspoons lemon juice
- 1/4 cup onion or green onion (for garnish and flavor)
Directions:
- Bring 4 1/2 cups of water to a boil in a large saucepan on high heat and pour in the instant grits and salt, then reduce the heat to low and let simmer for 25-30 minutes while stirring occasionally. Stir more often in order to achieve the desired thickness.
- Remove the pan from the heat and add cheddar, parmesan, butter and pepper. Stir until smooth consistency.
- Add some oil to a skillet over medium heat and toss the shrimp in with the flour, garlic and pepper.
- Cook the shrimp for 2-5 minutes, or until the shrimp turns a light-pinkish color.
- Stir in lemon juice—and onions if desired.
- Serve grits on a plate and top with shrimp. Enjoy!
This dish is perfect for any night or occasion. It’s the epitome of Southern food and is a great addition to your palette. If you want to spice up your dish, you can add more specific flavors to it with some jalapeños for an extra kick or your favorite cheese for a more homey taste.
