Whenever I wake to the sweet smell of coffee and a ruckus in the kitchen, it only means one thing: dad is cooking. My father has a flair for the dramatic. Though he is a quiet man, he certainly makes his presence known 一 especially in the kitchen. From his hands I have tried many a combination, including but not limited to lentils and rice with yogurt and sugar, sesame seed cookies, small cubes of bread toasted with diced onions, and his most famous one which I share with you now, the strawberry avocado toast. That is exactly what I found in my kitchen on one particular morning just a few months ago, and after scolding him for spoiling my newly-purchased farm fresh strawberries in another one of his insane schemes, I relented to his unwavering, mischievous smile and urges of “just try it.” I did more than just try it. I ate not only his piece, but finished the entire mix altogether. It’s just incredible, the sweet and savory tango of the avocado and strawberry, the salt conducting and the pepper spicing up the whole affair.

I certainly believe everyone needs to try this recipe, so don’t be shy and get started with it below!

Strawberry Avocado Toast

Yields: 2-3

Ingredients:

  • 1 mashed avocado
  • An equal amount of mashed strawberries (however you would like to prepare them, consistency wise)
  • Salt and pepper to taste
  • 2-3 slices of bread (your choice, but I recommend whole wheat)

Instructions:

  1. Toast your bread, and while toasting take your different mashed components (strawberry and avocado) and mix together as you please
  2. Spoon mixture onto toasted bread
  3. Season with salt and pepper as you’d like, and enjoy!

Surprisingly, I have found that this recipe works with many different fruits. I especially love the combination with kiwis, since it gives the appearance of a regular avocado toast but surprises you with that sweet-sour tangy combination. Honestly, any fruit with a medium sweetness level and perhaps some more citrusy or acidic notes can work perfectly in place of a strawberry in this dish. Certainly, this is the most refreshing breakfast combo, perfect for the summer heat we find ourselves in. Enjoy!
