Mother’s Day is right around the corner, and what better way to cherish your mom than by treating her with a breakfast in bed? If you’re like me and bad with showing your feelings through words, show them through food. You don’t have to be as skilled as your mom to whip up something delicious. I put together three simple recipes that will make the ultimate Mother’s Day meal and really show your mom how much you love her!

Nutella Waffles

Ingredients:

3/4 cup flour
1/4 cup corn starch
1 tsp sugar
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1/3 cup oil
1 egg
1/3 cup Nutella
1 tbs Canola oil
Waffle maker

Instructions:

Whisk all dry ingredients together (flour, corn starch, sugar, baking soda and salt).
Add wet ingredients (buttermilk, oil and egg).
Let batter sit for 15 minutes (start on other recipes while waiting).
Swirl in Nutella. Thin the Nutella out by adding canola oil and microwaving for 30 seconds. Nutella should be a thin, drizzle-like consistency. If not, add more oil and microwave again.
Pour batter into the waffle maker and follow waffle maker instructions.
Drizzle Nutella on top if you have an extra sweet tooth!

Eggs in a Basket

Ingredients:

1 slice of bread
1 tbs butter
1 egg
Kosher salt
Freshly ground black pepper

Instructions:

Heat pan to medium/high.
Cut heart into center of bread (or use a heart-shaped cookie cutter if you have one) and take out the center piece.
Melt butter in a large pan.
Butter both sides of the bread. Add bread and toast until golden brown on one side. Flip onto the other side.
Crack the egg into the center of the heart. Add salt and pepper to taste.
Set heat to low/medium and gently cook the egg until the egg whites are set and egg yolk is cooked to liking.

Yogurt Parfait

Ingredients

Yogurt of your liking (I used blueberry yogurt for this recipe)
1 sliced kiwi (or fruit of your choice!)
Granola
Coconut flakes
Sliced almonds
Honey

Instructions:

Layer yogurt into glass (thickness of each layer is up to you!).
Layer granola, coconut flakes and sliced almonds.
Drizzle honey.
Layer sliced bananas.
Repeat until filled to liking.
Refrigerate and serve chilled.
