Chicken Tomato Pasta

Ingredients:

  • 2 chicken thighs
  • 8 ounces of penne pasta
  • 28-ounce can of crushed tomatoes
  • 1 ½ cups of water
  • 1 ½ cups of chicken broth
  • ½ cup of shredded mozzarella cheese
  • ½ cup of shredded parmesan cheese
  • 3 cloves of garlic
  • 2 tablespoons of olive oil
  • garlic powder
  • salt and pepper

Directions:

  1. Cut the chicken thighs into small pieces and mince the garlic cloves.
  2. On medium-high heat, heat up a large pot with the olive oil and toss in the minced garlic.
  3. After garlic starts sizzling, add the chicken and stir until cooked through.
  4. Once the chicken is cooked, add the water, chicken broth and crushed tomatoes.
  5. Keep cooking on high heat until the mixture comes to a boil.
  6. Once boiling, add the pasta and cook until al dente.
  7. Lower to medium heat and add the mozzarella and parmesan cheese to the pasta.
  8. Mix everything together and season to taste with garlic powder, salt and pepper. 
  9. If the mixture is still watery, let it simmer until the sauce thickens.
  10. Once the pasta is cooked to your liking, serve and enjoy!

 

Creamy Mushroom Pasta

Ingredients:

  • 8 ounces of sliced white mushrooms
  • 32 ounces of chicken broth
  • 12 ounces of dried spaghetti 
  • ½ cup of half and half
  • 3 garlic cloves
  • 2 tablespoons of olive oil
  • salt and pepper

Directions:

  1. In a large pot, heat the olive oil, garlic and mushrooms on high heat until cooked.
  2. Stir in the chicken broth and half-and-half.
  3. Leave the mixture to boil on high heat.
  4. Once boiling, add the pasta and cook until the sauce thickens and there is no excess liquid.
  5. Season to taste with salt and pepper and serve!
