I love making Korean ground beef bulgogi rice bowls and I wanted to upgrade the dish a bit more by making it into a fun fusion snack. By replacing the rice with nachos and adding some kimchi and cheese, I ended up making a delicious midday or midnight snack. These nachos are the perfect snack to grab while watching a movie or just because of how affordable and easy they are to make.

Ingredients:

  • 1 lb ground beef, 80% lean and 20% fat
  • 1 large yellow or red onion, diced
  • 1 cup kimchi
  • ½ cup shredded cheese, more if desired
  • 1 sprig of green onion
  • 1 bag tortilla chips
  • 4 cloves of garlic, minced
  • ⅓ cup soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • Sriracha and mayo

Directions:

  1. In a large bowl, combine the ground beef, garlic and soy sauce while breaking up the ground beef as much as possible. Let this mixture marinate for five minutes while you dice the onion and chop up the kimchi into bite-size pieces.
  2. In a large pan over medium heat, saute the onions until they are translucent and then add the ground beef mixture. Break up the ground beef even more with your spatula and cook on medium-high heat for seven to 10 minutes or until the beef is caramelized and all the marinade has been reduced. A minute or two before you take the beef out of the pan, mix it with the sesame oil.
  3. Generously sprinkle the tortilla chips with shredded cheese then heat in a toaster oven until the cheese is melted.
  4. Meanwhile, caramelize the kimchi in a pan over medium heat by cooking it with sugar for five minutes.
  5. In a separate bowl, mix the sriracha and mayo in a 1:2 ratio until you reach your desired taste.
  6. Take the chips out of the oven and top with kimchi, beef, green onion, sriracha, mayo and more cheese.

It was my first time making these nachos and they turned out delicious! I’d say that they taste even better than the beef bulgogi rice bowls I always eat because of the added flavor of the kimchi and because nachos are such a fun food to eat. I’ll definitely be making this again and trying it with different carbs, such as fries or tater tots.
