French toast is a classic brunch item, so why not elevate it and make it even better? After eating the crunchy French toast at Blu Jam Cafe in Los Angeles a few months ago, I was inspired to attempt making this dish on my own. Although I love French toast in its original form, the added crunchy exterior made the brunch dish even more delicious because of the texture contrast between the crust and the soft, fluffy bread. To make crunchy French toast, you’ll need all the ingredients for regular French toast, plus some cornflakes or Frosted Flakes. If you have a big sweet tooth, I’d go for the Frosted Flakes for the extra sugar. But I also think cornflakes work just fine, especially if you’re serving the toast with maple syrup.

Ingredients:

  • Cornflakes or Frosted Flakes, 1 1/2 cups crushed
  • Brioche bread, 4 slices
  • 3 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 3 tbsp butter 

Directions:

  • Mix the eggs, milk and vanilla extract together in a large, shallow dish.
  • Crush the cornflakes in a Ziploc bag with a rolling pin.
  • Let the slices of bread soak in the mixture for one minute, making sure to coat both sides of the bread.
  • Dip each slice of bread into the cereal, flipping and pressing gently to coat both sides.
  • Melt the butter in a skillet over medium heat and fry the French toast until it is golden and crispy on both sides.
  • Serve with warm maple syrup and fruits of your choice.

I’d definitely recommend this if you’re craving something sweet on the weekends. There are only two extra steps if you compare this to making regular French toast, so it isn’t difficult at all and it’s sure to give you a great start to your day!
