With dead week and finals week in our midst, it gets difficult to take time to focus on ourselves. For me, I often forget to eat breakfast because I simply don’t have the time to cook or I’m just too sleep-deprived to even drag myself to the kitchen. But luckily, after buying an entire box of butter croissants from Costco, I was inspired to start making breakfast again. This recipe is super simple and the only thing you really have to cook is a fried egg—what’s easier than that?
1 croissant halved lengthwise
2 slices thick-cut bacon, fried and drained
1 large green leaf lettuce leaf
1/2 cup arugula
1/4 large vine-ripened tomato, sliced
Salt and freshly ground pepper, to taste
- Fry two eggs sunny-side-up and season with salt and pepper. If you don’t want to use salt, try substituting it with the 21 Salute Seasoning from Trader Joe’s!
- Slice croissants in half horizontally and toast until golden brown on the edges.
- Assemble sandwich starting with the bottom slice, then lettuce, the arugula, then two bacon slices, tomato slices, fried eggs, and finally, the top half of the croissant.
If you’re feeling extra trendy, you can add avocado slices from half of a ripened Hass avocado to add some more richness to the sandwich. You can make this croissant sandwich with tons of different varieties. I’ve tried it adding turkey meat and cheese, and honestly, it’s the butter croissant that ties everything together. So with whatever ingredients you have at home, try this sandwich out for your next most important meal of the day!
