Mornings can be rough, especially when you have an 8 or 9 a.m. lecture that’s all the way across campus. Luckily, I have four fall-inspired overnight oat recipes that are super yummy and only take five minutes to make! Overnight oats are made by combining all of your ingredients in a container and leaving it in the fridge overnight.

High in nutrients and protein, oatmeal offers many health benefits to give you the energy to power through the day. Aside from those health benefits, oatmeal is a very versatile and delicious food that can be enjoyed at any time of the day. Pro-tip: Add cauliflower rice to your overnight oats! Sometimes, it’s really difficult to eat all of the suggested vegetable servings in a day, and adding cauliflower to oats is an easy way to sneak in a serving. When all of the ingredients are combined, you can’t even taste the cauliflower.

Of course, this addition is totally optional and the recipe will work just as well without the the riced cauliflower. I know that many people think oatmeal is boring and bland, but these oat recipes are filled with flavor and are a real treat.

Pumpkin Pie Overnight Oats

Ingredients:

½ cup rolled oats

½ cup milk of choice

¼ cup pumpkin puree

2 tsp. any liquid sweetener (I recommend maple syrup, agave or honey)

½ tsp. pumpkin pie spice

Combine all of your ingredients, mix and store in a sealed container overnight or for at least 4 hours

Optional: a scoop of protein powder, ½ cup of cauliflower rice

 

Maple Pecan Overnight Oats

Ingredients:

½ cup rolled oats

½ cup milk of choice

2 tsp. maple syrup

¼ cup pecans, chopped

Combine all of your ingredients, mix  and store in a sealed container overnight or for at least 4 hours

Optional: a scoop of protein powder, ½ cup of cauliflower rice

 

Cinnamon Apple Overnight Oats

Ingredients:

½ cup rolled oats

½ cup milk of choice

2 tsp. honey

1 honeycrisp apple, chopped

1 tsp. cinnamon

Combine all of your ingredients, mix and store in a sealed container overnight or for at least 4 hours

Optional: a scoop of protein powder, ½ cup of cauliflower rice

 

Hot Chocolate Overnight Oats

Ingredients:

½ cup rolled oats

½ cup milk of choice

1 tbsp. unsweetened cocoa powder

2 tsp. any liquid sweetener (I recommend maple syrup, agave or honey)

Combine all of your ingredients, mix and store in a sealed container overnight or for at least 4 hours

Optional: a scoop of protein powder, ½ cup of cauliflower rice

When you’re about to enjoy your oats, you can eat them out of the container they were made in or transfer them to a bowl. I typically use a mason jar to make my oats, so I can easily take them with me to class or the library. But when I have time, I like to transfer my oats into a bowl and top them with some superfoods such as chia seeds, bee pollen and/or almond butter. These oats are super cozy and will transport you into autumnal bliss!
